Matcha pancakes

I have been wanting to use Matcha and tea in more recipes.  I love a nice big, elaborate breakfast on the weekends and panckaes with maple syrup is one on of my favourite breakfasts.  So, I decided to see what matcha pancake recipes were out there worth trying.  This Matcha Honey Pancake recipe looked interested.  Note, I didn’t actually use any honey but instead served with maple syrup!  The recipe and directions are below.  My comments about the recipe are, while it tasted wonderful the batter was on the sticky side and not a familiar pancake batter than is easier spread out in the pan.  This batter requires you to spread it around into the shape and size you want your pancake.   Definitely worth trying and nice way to start the weekend!

matcha pancakes

  • 1c flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • 1 tbsp matcha
  • 1 egg
  • 2 tsp vanilla extract
  • 2 tbsp olive oil
  • 1c + 1 tbsp milk

  1. Whisk together dry ingredients
  2. Make a hole in the dry ingredients and mix in the wet ingredients
  3. Mix until combines
  4. Grease pan with oil and heat.
  5. Put 2-3 tbsp of batter into the hot pan and spread around.
  6. Cook on both sides about 1 minutes until brown
  7. Serve with maple syrup.

Modifications for future versions:  I’m thinking that for a future matcha pancake recipe is that I will use an existing, traditional pancake recipe and add 1 or 2 tablespoons of matcha powder to the recipe.  Hopefully, this will maintain the traditional pancake batter consistency while providing a slightly matcha flavour.  Stay tuned for future versions of the Matcha Pancake recipe.

Alternate tea choices:   After making this recipe and reviewing the recipe, I’m thinking that any strongly brewed tea turned into a latte with the 1c+1tbsp milk would be a nice modficiation and alternative to matcha.  I would start with a brewing a strong, milky chai and adding that instead of just plain milk to the above recipe.

Note:  I’m no cook, chef or baker so everything I make is based on the enjoyment of creating something new, cooking, baking and especially tea!  I hope you enjoy the recipes, both making them and the tasting the results!
